TASTING NOTES
The nose shows white fruit, floral, and mineral notes. In the mouth, it shows good natural acidity, balanced with structure and some volume. Persistent and very mineral finish, reminiscent of savory notes. Naturally Stabilised.
Manual harvesting for small boxes. In the cellar, the grapes are manually sorted on a rolling belt and then pressed whole in a press. The cleanest must obtain is sent for cold static decanting in a stainless-steel tank. The clean must is then transferred to another stainless-steel tank where fermentation begins at a controlled temperature of around 15ºC, followed by "batonnage" for 5 months.
