The pinotage was crushed and fermented in a rototank before being decanted into oak barrels, durif, Tempranillo and Grenache were are destemmed and crushed into small open fermented with approx 10% whole bunches. Natural yeast has been used . We did 4- 6 punchdowns a day. Pressed into barrel The carignan was fermented in an open fermenter and aged in a flex cube with french oak staves. Wine was assembled in Feb 2019 and held in tank for 6 months before being bottled.
