TASTING NOTES
The 2025 vintage in the Menfi area was characterised by favourable growing conditions. Winter and spring rainfall replenished soil reserves, ensuring good water availability during the vegetative cycle and limiting summer stress. A mild summer, free from heatwaves and marked by moderate temperatures, encouraged slow, even ripening while preserving natural acidity and aromatic intensity.
The grapes were harvested at night over a period of 40 days to preserve freshness and quality. Maceration and fermentation took place over 15–20 days at 16–18°C, ensuring optimal extraction and aromatic expression. The wine was then aged in stainless steel vats for approximately four months prior to bottling.
