James Gin American Mustard

When developing this flavour we quickly discovered that mustard seed, when distilled, can produce impressively poisonous compounds. This was inconvenient. So instead, we developed a process of distilling the gin in the traditional manner, then adding the mustard seed and dill pickle afterwards. (as a result it may become slightly cloudy over time - all you to do is shake the bottle and it'll clear again. Or just drink it).

So, proper mustard flavour without the botulism. Doing it properly, in other words. Which, as a general principle, is how we prefer things.

The mustard is front and central and provides warmth while being light on the tongue. We paired it with gherkin to counterbalance the heat by giving a briny note to the finished product. As a result, it’s a savory style gin that is both light and warming, with tomato providing a smoothness to the profile.
