TASTING NOTES
2025 was a highly promising vintage in Sicily. A wetter winter followed by a mild spring supported balanced vegetative growth after several challenging years, resulting in healthy, vigorous vines and a return to more typical harvest timings. Summer conditions remained largely favourable, with low disease pressure and excellent vineyard health across many areas, yielding clean, high-quality fruit. Overall, the season allowed for full ripeness and clear varietal expression.
Following harvest, the grapes were de-stemmed and allowed to macerate on their skins before a gentle pressing. Fermentation took place at 15° in stainless steel tanks. The wine is then left on lees at least 6 months before being bottled.
