Yetti & The Kokonut, Bubbles 2021
Organic Savagnin grapes were de-stemmed and fermented with indigenous yeast. Some original must was kept aside to be added to the wine and kickstart a second fermentation just before the wine was bottled. This created the fizz inside the bottle. No filtration, fining, or added sulphur.
