TASTING NOTES

The nose is very fresh and elegant with notes of berries and black cherries in balance with seductive nuances of “liquorice”, and the aroma complexed by discrete wood notes. The palate is warm, denoting firm tannins smooth texture and long finish.

Full temperature control, elimination of the bunches that aren’t in perfect condition, total destemming, soft crushing and thermal shock, then followed by a period of pre-fermentation and cold maceration in mill for about 12 to 24 hours, after which the masses were transferred to vats. Maceration for 8 days at 22 ° C.

It is best accompanied by cheese, meat and most Mediterranean food.
