Exquisitely Engineered 6 O’clock Gin Brunel is an export strength expression of our classic London Dry gin.

Rich honey and mango flavours lead into notes of pink pepper, black pepper and cassia adding a warming spice. Plenty of fresh grapefruit peel lends the gin a subtle dryness while the honey and vanilla gives a sweet finish.

This dry gin combines Macedonian juniper with local elderberries, samphire and gorse flowers

Like Sloe gin, our Damson is hand made in the traditional way; in small batches, using hand-picked British damsons and a moderate amount of sugar.

The Darling of the North. Dandelion and Burdock is a favourite flavour combination. We’ve taken the earthy flavours of the roots of these botanicals and distilled them with locally foraged heather, honeybush to add a floral lift and cola nut and almond to bind the flavours with orris root to add length. A classic dry gin when served with tonic water, but if you’re after that old school northern fish and chip shop Dandelion and Burdock serve with ginger ale / or D&B soda.

Squid Ink is such a powerful ingredient that only a minimal amount is needed both for the distilling and colour or infusion of the gin. Vanilla was added to the base of the recipe to give a well rounded mouthfeel and perceived sweetness , coupled with sea buckthorn for a tart, fresh fruit finish.

Fever-Tree Mediterranean Tonic a masterful blend of quinine with notes of thyme, rosemary and citrus. Add to vodka, and sit back and enjoy a Mediterranean twist to your vodka and gin.

This expression incorporates both olive leaf and olive oil as botanicals, as well as a host of herbs like rosemary, bay leaf, coriander, and more.

Local botanicals (Tasmanian pepperberry, lemon myrtle), some exotic botanicals (cinnamon, cardamom, coriander seeds and star anise) and some classic botanicals (juniper, lavender, angelica root), as well as whole oranges.

Juniper, Sicilian citrus and Italian Pinot Grigio grapes! Lots of white fruit notes to be enjoyed thanks to the addition of the grapes – perhaps a gin for wine lovers…?
