TASTING NOTES
Pinot Noir grapes grown in a particularly cold site 3000 feet above sea level are hand-harvested, de-stemmed, crushed and macerated between 4 and 6 hours, Fermented in stainless steal deposits with local yeast at 12°C. Bright strawberry, crunchy watermelon and dry chalk. Lovely ripe and aromatic yet still quite focused and tart. Broader shouldered than a Provence rose, but has the fruit and acidity to balance it beautifully well.
