Simon Hackett Brightview Chardonnay 2021

Dry medium bodied white wine, full and rich in colour with distinct peach and melon notes, complemented by subtle oak and a mineral palate. Brightview Chardonnay is a blend of grapes from two different regions, Cowra and Padthaway, over 900 kms apart. Harvest timing was carefully determined by flavour development, sugar and acid levels and took place in the cool of the night. Fruit was destemmed and chilled to a bag press where it underwent a gentle press cycle and the free run juice was separated for each parcel. The resultant juice was lightly clarified before undergoing a slow fermentation at cool temperatures of 14- 16ºC using carefully selected yeast in optimising varietal expression. Prior to blending and bottling the wines underwent an extended period of 3 months on yeast lees and time in premium French oak puncheons. A delicious accompaniment to rich and creamy chicken or pasta dishes.
