The must was then cold settled for 48 hours, racked and then fermented in cement and stainless steel for about two weeks at controlled temperatures of between 13-14°C. Unoaked, the wine was bottled early to retain freshness and delicate aromatics.

The 2025 vintage in the Languedoc was shaped by contrasts that ultimately favoured freshness and balance. A mild winter and a humid spring increased disease pressure and required careful vineyard management, while a warm, dry summer moderated vigour and encouraged steady ripening. Cooler nights close to harvest helped preserve acidity, a defining trait for Picpoul. Harvest began relatively early under settled conditions, with yields generally below average but fruit arriving in good health.
