TASTING NOTES
A precise expression of Sancerre’s local Caillotte soil. Rich and full-bodied in taste. The grapes come from the fields adjacent to the vineyard in Chavignol. It has a soil type locally called Caillottes, which consists of gravel and small limestone. The field is certified HVE (High Environmental Value). The grapes are harvested partly by hand, partly by machines, and they are pressed with a pneumatic press. The wine is vinified in temperature-controlled steel tanks to retain Sauvignon Blanc’s fine and fresh aromas and is then left for 6 months on the yeast residues in a combination of oak , amphorae and steel to give fatness to the wine. The terroir gives a precise, fine and nicely balanced Sancerre. The wine is bottled approx. 1 year after harvest.
