This wine is blended from a handful of the top performing blocks on this property each chosen for their exquisite flavour and aromatic profile. The vines cropped between 7 to 9 tons a hectare. Once they had reached optimum flavour ripeness, the grapes were hand-picked at dawn, ideally at sugars between 21.5 and 22.5 degrees brix and acidities of between 6.5 g\/l to 9.5 g\/l. Whole bunches were cooled in a cold room before being transported in a closed truck to our winery on The Helshoogte Pass in Stellenbosch. Immediately upon arrival the grapes were destemmed, crushed and cold pressed in our inert press (zero air). The press juice and free run juice were kept separate and settled overnight, followed by racking off the next day. Only the free run juice from the best blocks is used for the Reserve Collection Sauvignon blanc. The juice was fermented at 15 degrees Celsius in stainless steel tanks with selected wine yeast. 9% of this blend is made up of wine fermented in 400L 3rd fill barrels and matured there for 5 months. After fermentation the wine was sulphured and left on the lees for five months with regular lees stirring before stabilization, filtration and bottling. 49,540 bottles were produced. The wine displays a stunning light straw colour with a brilliant green edge. The nose opens with aromas of Passion Fruit, Caped Gooseberry, lemongrass and a signature wisp of Blackcurrant leaf. There is an amazing freshness as the wine enters the palate, with flavours aligning with the aromas and leading to a textured mid-palate and a lingering saline finish. The grapes originated from TOKARA’s premium vineyards on the slopes of the Simonsberg Mountain just outside of Stellenbosch.\u003c\/p\u003e\n\u003cp\u003eOnly grapes from the best blocks and from the best parts of these blocks are used. The vineyard yield between 7 and 9 t\/ha. The grapes were hand-picked at optimal ripeness between the 7th February and the 24th March.\u003c\/p\u003e\n\u003cp\u003eThe grapes were de-stemmed, before passing across a sorting table for the removal of all unwanted material and then crushed directly into tanks for fermentation without the use of pumps. There is first a period of cold maceration for up to 5 days before the fermentation starts spontaneously (without the use of selected yeast strains). The grapes were fermented in stainless steel and wooden upright (foudre) fermenters. Pump-overs, dellastage and punching down of the cap were implemented twice a day for extraction until the fermentation completed. The tanks were given maceration post fermentation. The wines were put to barrel for malolactic fermentation after which they were racked, sulphured and put back to barrel for a further maturation. The wines spent a total of twenty-two months in 49% new French oak – the rest being older French oak barriques. During maturation the wines received four racking’s, all done barrel to barrel. The wine was bottled in January 2022 with no fining and a light filtration. 17,932 bottles were produced.\u003c\/p\u003e\n\u003cp\u003eThe wine displays a brilliant purple-black core and deep ruby edge. The nose leads with classic graphite notes, black cherry and briary fruits interwoven with aromas of cassis and five spice. There is a deft freshness underscoring these aromas with hints of ripe tomato skin and fynbos scrub. The palate is pleasantly full-bodied with flavours mirroring aromas all leading to a multilayered persistent finish.\u003c\/p\u003e\n\u003cp\u003eRoast red meat dishes.
