Crushed and de-stemmed, followed by twice daily pumpovers for 8 days, then one pumpover per day to wet the cap until pressing 42 days later. Malolactic fermentation took place in seasoned oak and stainless steel tanks.\u003c\/p\u003e\n\u003cp\u003eDeep ruby red with purple hues, aromas of raspberries, cherries and subtle notes of cinnamon spice. On the palate bright red berries and cherries dominate, with a hint of cinnamon. It's behaviour viticulturally in Australia is excellent and appears to thrive in our Mediterranean style climate. This wine was fermented using traditional plunging techniques in open fermenters followed by an extended maceration on skins.
